First I'd like to apologize for being MIA for so long when it comes to this blog. I've been busy getting into the grove of doing articles over at MadeinKitchen.

When I thought I managed to catch up and be doing well, I had to start fighting off a cold and it was making me very worn out, to the point that I just didn't have the energy to do anything over here with what little spare time I had. I didn't even want to take photos or try to do anything new in the kitchen. I even missed out on doing the most recent Daring Baker's challenge :(.

Then, just when I was getting caught back up again my son got stomach flu and a cold... which then of course I got (we are both peachy now though :) )... I have now decided they need to have little disinfecting chambers at schools for kids to go through before they go in and come out of the schools so they don't bring the nasties home with 'em! They can handle being sick much easier than I can... I think that's a sign that I'm old or something.

Anyways, I'm finally feeling better, in fact so much better that I was able to get my booty into the kitchen and bake. I had posted a recipe last weekend for blueberry and lemon scones over at MiK, and decided I need to make some of my own. But the hubby doesn't like blueberry so I decided to make these apple ones instead!

Apple Scones

Apple Scones
  • 2 cups flour, half whole wheat and half unbleached all purpose
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, cold and cut into pieces
  • 1 teaspoon cinnamon 
  • 3 apples, peeled and cut into small pieces
  • 1 egg
  • ½ cup milk
  • 1 teaspoon lemon juice
  • 1 teaspoon brown sugar
In a bowl mix flour, sugar, baking powder, baking soda, 3/4 of the cinnamon and salt. Add in butter. Using your hands break the butter up into the dry ingredients until it makes a sandy texture (takes about 5 minutes). Add in the apple pieces and mix well.

In another bowl beat the egg, milk and lemon juice together. Pour a little at a time into the dry ingredients and mix before adding in more. It will make a very wet dough. Turn it out onto a floured surface and knead about 4 or 5 times. Using your hands, pat out the dough into a round circle about 1/2 inch thick.

Take out a round baking sheet (pizza pan) and pour about 1/2 tablespoon of oil on it. Using a napkin, spread the oil around on the pan so it's nice and oiled but not overly so. Because I used a cutting board to knead and spread my dough out onto, I took the pizza sheet and turned it on top of the dough. Sliding one hand under the cutting board and the other on top of the pizza sheet, flip it over so the pizza pan is on the bottom. Gently lift the cutting board off the dough and pat out the dough again. Take a knife and cut the dough like a pizza to make about 16 scones.

Sprinkle brown sugar and the rest of the cinnamon on top of the scones and put in a preheated oven at 400F for about 15- 20 minutes or until the top is golden brown.

The little one has yet to try it, but I'm hoping he'll like them too and the hubby was quiet happy with the results well.These tasted soooo good and were so incredibly easy I HAVE to make them again, probably using other fruits like strawberries or peaches depending on what I can get my hands on!

Welcome back! :) There must be something floating in the air in Ontario lately, because I was just thinking the other day that I should make some scones... of course, I was leaning towards walnut and cranberry, but I might try apple instead since your photos are totally drool-worthy.

These look delish. I'm going to try these and then experiment with other fruits too, which is something I wouldn't have thought of before. You have converted me from an old fashioned scone person!
